Sriracha Egg Bites

4662

We all have food cravings, and most of the time it is for items that we have already tried.  The posts under Cravings will be for new recipes that I have tried that is now a new craving.  A craving is something I want to eat every week or every month. I will not say all the recipes here will be healthy, but I will try to sprinkle a couple in every now an again.

The most recent craving has been…….Sriracha Egg Salad Bites – A twist on the old egg salad

We eat this as a snack and serve it with lettuce or with Triscuit crackers and tomatoes.

I am thinking that the next time we make this, I will add bacon and then I will have to try it healthy by replacing the miracle whip with avocado. I have not eaten this on bread so if you make a sandwich out of this egg salad comment below on how it turns out.

Ingredients

    • 8 large eggs
    • ½ cup Miracle Whip
    • 2 Tbsp sriracha
    • 1-2 Tbsp sweet relish (optional)
    • Dash of salt
    • Dash of pepper
    • Dash of garlic powder

  1. Place the eggs in a pot of water that covers them completely. Boil the eggs, once it reaches a full boil cut off the heat and let it sit for 15 minutes.  Then cool it down with cold water for 10 minutes.
  2. While the eggs are cooking cut up the onions and make the sauce by adding the Miracle whip, sriracha, sweet relish, salt, pepper and garlic powder in a bowl.
  3. Peel and rough cut up the eggs into the sauce bowl and stir.

Immediately serve or refrigerate for later.  As a snack, this will last for us for three days and is now in our monthly rotation of snacks.  Enjoy your new craving!
